Thibault Dufour is used to challenges and surpassing himself. This former sports champion applies the same high standards to his profession as chef: excellence, performance and sensitivity. His passion: taste. His challenge: respect for the product, short distribution channels for French cuisine combining tradition and creativity.

Trained by such gastronomic legends as Georges Blanc, Christophe Bacquié, Serge Vieira and Marc Meneau, Thibault stands out for his craftsman's approach to good home cooking. In turn sous-chef and chef in renowned establishments, in 2023 Thibault embarks on the great adventure of becoming chef of his own restaurant. Brasserie Dufour's menu features regional products, simple dishes tinged with childhood memories, brasserie-style recipes and affordable, seasonal menus... Ready to get started?

Claire Dufour, La Maître d'Hotel

She is the soul of the brasserie ! She is also the eyes and ears of the chef, the brigade and, above all, the customers. In short, a true orchestra conductor who sets the pace and ensures that everything runs smoothly both in the kitchen and in the dining room.

Passionate and attentive, she naturally perceives customer expectations. Claire is passionate about her job, and is returning to the tradition of traditional brasseries, where the maitre d' was the key figure, the one who knew, recognized and took care of new customers as well as regulars.

A furnace born under a lucky star!

Produced in the prestigious Molteni workshops in 1986, this furnace is unique in more ways than one. Custom-built to chef Marc Meurin's exacting standards, it begins its life as a high-end kitchen range. In 1992, for the chef's 1st star, followed by a 2nd in 1998, he was in the front row. In 2001, a change of owner, a change of location... and history repeats itself with a 1st star for Eric Delerue, chef at Le Cerisier restaurant in Laventie. After 17 years with the Michelin-starred chef, the Molteni stove continues its prestigious career, becoming the centerpiece of the Brasserie Dufour kitchen in 2023.

His ingredients are carefully selected from a list of local producers with whom he shares a respect for the product. Blending tradition and modernity, brasserie-style dishes and regional specialties, Thibault's aim is to offer tasty, warm and accessible cuisine.

    Nestled in the heart of Lille's old town, the building has retained its authentic appearance, with its old bricks highlighted by limestone. Built in the 18th century, the building has seen its share of history, damage and the ravages of time. In 2023, a new lease of life for this building, restored to its original state by Thibault and Claire and regional craftsmen, guardians of the local heritage.

    Today, the restaurant is open to the general public, who will appreciate the exterior as much as the interior. The room is warm and inviting, with art deco details and brasserie-style markers creating a welcoming, modern ambience.

    At the back, the kitchen is open, and there's even a table! Don't forget to book it for an unusual and unforgettable culinary experience in a chef's kitchen.
